Foeniculum vulgare
Tall aromatic plant with feathery foliage and aniseed flavor.
Fennel needs between 6 and 10 hours of direct sunlight per day and should be planted in spring outdoors, in well-drained, preferably calcareous soil. Watering should be sparse, allowing the soil to dry out well between waterings, as it tolerates drought very well. It is very hardy and withstands temperatures down to -10 °C, so no special winter protection is needed in Mediterranean climates. Bear in mind that it has mild toxicity, so avoid contact with eyes and sensitive skin when handling it.
