Cynara cardunculus
Large perennial herbaceous plant with big, pinnate and spiny leaves. The whitish stems are edible and used in Mediterranean cuisine, especially in rice dishes and stews.
Plant in well-drained, deep soil. Needs full sun and moderate temperatures. Water regularly during growth. Harvest stems before flowering. Drought-tolerant once established.
