Cichorium intybus
Herbaceous plant cultivated for its roots and leaves, traditionally used as a coffee substitute and in cooking. Produces striking blue flowers and is very resistant to cold and drought.
Sow in spring or autumn in well-drained soil. Requires minimal maintenance. Harvest roots in winter when fully developed. Tolerates drought well once established.
