Amaranthus cruentus
Ornamental and edible plant with nutritious leaves and seeds. Its inflorescences are spectacular.
Amaranthus cruentus needs an outdoor location with direct sunlight for at least 6 hours a day and should be planted in spring once temperatures are consistently above 15 °C, as it does not tolerate frost. Water with moderate frequency, keeping the substrate slightly moist but never waterlogged, and use fertile, well-drained soil. It thrives in Mediterranean climates and can reach between 80 and 120 cm in height, so staking may be needed in windy spots. Its leaves and seeds are edible, but bear in mind its mild toxicity and avoid excessive consumption without proper preparation.
